In this course, students explore the role of diet and dietary modification in the prevention and treatment of disease, including metabolic syndrome, cardiovascular (CVD) diseases, diabetes mellitus, renal disease, gastrointestinal disease, AIDS and cancer. The role of nutritional therapy in treating surgical, burn and trauma patients is examined including enteral and parenteral nutrition. Students learn about the nutrition concerns and diet modifications for the older adult and the issues surrounding palliative nutrition.
