This course is based completely on fish and seafood. An in-depth study of cooking methods that reflect people’s needs for cooking styles for a healthier lifestyle. The students will be exposed to many different types of fish and seafood and will study many methods of cooking and preparation. Recipes will be supplied. As the reaffirmation of previously taught theory pertaining to fish and shellfish in CULN 826 is a component of this course, each student is expected to come to class prepared for note taking.
