Students are introduced to the challenges of hunger and the global food supply in this course. Environmental degradation and the development of a sustainable food supply will be explored and debated. Students will evaluate the many effects of technology on our food supply including the effect of food processing on nutrients, and the regulations and safety of food additives, organic foods, and genetically modified foods. A culminating project requires students to provide education sessions for the public on food technology issues.
