The internship course is a required component of the Culinary Management program and provides the student with hands-on, practical exposure to the culinary industry. The culinary internship provides students with the opportunity to train under certified professionals with an approved culinary partner within a fine dining restaurant or hotel setting (kitchen operation). The internship is based on a 40-hour training week over a seven-week schedule for a minimum of 280 industry hours. Students have an opportunity to observe and learn from experienced personnel in a real-life work setting, while integrating a competency-based working template as a framework for learning. The internship encourages students to apply skills and implement knowledge learned in the classroom to the needs of the current workplace.
