At the end of this course, students are able to explain the functions and operation of a full-service dining room and front-of-house procedures practised in the hotel and restaurant industry. This course is taught in a classroom and, when available, The Humber Room Restaurant may be utilized for practical exercises. It introduces students to front-of-house positions and techniques of customer service. The course includes service styles and sequences for different types of restaurant settings. Students gain foundational knowledge of dining room service, table set-ups, point of sale system (POS), wine, tea, coffee, beverage and liquor. Smart Serve certification is part of this course.
