This course engages students in advanced cake mixing techniques while building on acquired knowledge and skills from BAKE 102. Students will have the opportunity to bake, assemble and decorate a variety of European-style cakes and pastries such as Sacher, Dobos, opera, assorted mousse torte, assorted French pastries, Gateaux St. Honore and croquembouche.
