This capstone course builds on the concepts from semester 1 and strengthens the students understanding of the strategic planning process as it applies to developing business plans for hospitality and tourism organizations. As the strategic planning process requires both internal and external data on the marketplace, competition, product offerings and the consumer, students undertake a research-based business planning project. In groups, students prepare a comprehensive business plan for a real or current business issue and present their findings to the organization's senior management. Using the fundamentals of business planning, feasibility analysis, operations, and marketing and finance, the students apply critical thinking to analyze options and illustrate plans. Guest speakers and case studies assist in developing these strategic skills.
