BackgrounderCompass Group Canada Culinary Arts Demonstration Theatre and Kitchen LabThe Humber Institute of Technology & Advanced Learning opened its new Compass Group Canada Culinary Arts Demonstration Theatre and Kitchen Lab in January 2005. Twelve months in the making, this innovative, multi-purpose classroom and laboratory was designed with consultation from Humber staff faculty and key industry partners. The lab is the first of its kind to be installed in North America. One unique feature is the Vent Master ceiling. A popular ceiling style in European culinary facilities, the state-of-the-art lab at Humber is home to the only one in North America. Slick and modern, the fans and ducts are hidden behind a stainless steel ceiling ensuring unobstructed sight lines. The stainless steel construction of the Vent Master ceiling makes it aesthetically pleasing and practical, operating at a noise level of less than five decibels. A grease extraction system allows for no bacterial build-up and the unit is simple and easy to maintain. Each Vent Master ceiling is custom fabricated, including appropriate lighting and fans suitable for the space. The system is Underwriters’ Laboratories of Canada (ULC) approved and includes fire protection and prevention measures. The design of the lab is conducive to holding theory and practical classes simultaneously. The facility is complete with a movable wall that will divide the space into two soundproof rooms, one for lectures and demonstrations, the other for hands-on learning for students. The theatre half of the new construction will include a demonstration counter complete with induction cook-top and electronic transmission. Presentations can be projected onto two large drop-down screens and a feed can be sent to a plasma television screen outside the room in the lobby. The kitchen features 12 workstations equipped with gas-fired stoves and sensor responsive hands-free washing areas. Two plasma television screens in the kitchen also display demonstrations taking place in the demonstration lab. The principal naming partner for the new facility is Compass Group Canada Ltd.
