In this course, students assemble and decorate cakes. Students will develop a working knowledge of cake decoration and design. Training include making and using pastry bags, paper cones, preparing icing and piping practice as well as the preparation of Gum Paste and Pastillage and the use of chocolate in decorating. Students will create a Workplan for their weekly lab and Formula portfolio to showcase their work.
