This course focuses on the effective delivery of catered events. Students will acquire an appreciation of the expertise required to develop menus, and pair wines/cocktails with various food styles. The student will learn how to plan, staff, and appraise the logistical requirements to properly execute the food and beverage requirements of an event. The students will also gain a thorough understanding of costing, and the profit concepts that are integral to catered events. The course will culminate with the students executing, and subsequently evaluating a catered event.
