This course prepares students to manage the financial aspects of a food service operation within the areas of health care and hospitality. Students learn how to interpret and analyze financial statements and operating budgets. Students identify and utilize the methods for calculating and controlling food, labour and other costs in order to operate a department that meets the financial targets of the organization.
