"Let food be thy medicine and medicine be thy food" (Hippocrates). In this course, students explore the role of diet and dietary modification in the prevention and treatment of disease, including metabolic syndrome, cardiovascular (CVD) diseases, diabetes mellitus, renal disease, gastrointestinal disease, AIDS and cancer. The role of food and nutritional supplements in healthcare is introduced, including the provision of enteral and parenteral nutrition. Students develop menu plans and goals to help clients better manage illness. The unique nutrition concerns and modifications for palliative care are also discussed.
