Reliable and tested recipes are a must-have for any pastry chef, and learning how to develop a successful recipe is a beneficial skill for anyone in the baking industry. In this online course, students will explore all aspects of recipe development, including ingredient balance, formula costing and work methodology. Students will gain a comprehensive understanding of nutrition and Canadian labelling guidelines, and science and math will be applied to a variety of bakery formulae through weekly research assignments. The final project will be a detailed recipe package, researched and designed by the student, to include supplier specification sheets, costing and nutrition facts tables.
