Cake decoration is a dynamic and creative field that continues to fascinate and captivate people around the world. Cake decorators must master some of the most challenging techniques in pastry, while maintaining a high standards in cleanliness and . In this course, students will research and observe trends and innovations in cake decoration through weekly site visits. In-class sessions will focus on detailed costing of cakes, including labour analysis and efficiencies, along with demonstrations and presentations by decorating experts and suppliers. Students will plan and cost a three tier cake, to include a number of complex decorative elements.
