Many Pastry Chefs and Bakers aspire to owning and managing their own successful bakery business. This online course will focus on the trends, manufacturing processes and challenges within the baking industry in North America. Through the development and branding of an original product concept, students will explore industry trends, grocery trends, manufacturing processes and marketing concepts. Understanding how to procure ingredients from reliable suppliers with a focus on fair trade and ethical sourcing, creating standards of production, and accurately costing items will also be explored as the course progresses. Students will prepare a table-top display, with samples, marketing materials, nutrition information and packaging, to a group of industry professionals at a culminating table-top show on the final topic of the course.
