Modern special-occasion cakes can be structurally dynamic and visually stunning at the same time. Many modern decorators make an intense study of architecture and design in order to enhance their understanding of cake decorating. In this master level course, students will plan and execute multi-tier stacked cakes that are structurally sound as well as beautiful to look at. Using elements like royal icing, pastillage, gum paste and chocolate paste, students will explore current trends in cake decorating, with a focus on height and precision, and adapt and improve their time management and accuracy skills.
