Chocolate and Confectionery Artistry Capstone

Learning how to positively interact with customers is a valuable skill in the baking industry. In this capstone course, students will work with real-world clients to plan, cost and execute a special occasion cake or sweet table presentation. Pre-planning will include a minimum of two meetings with the client, to include samples and design proposals. Once a design has been agred upon, students will accurately cost their items, as well as create a detailed timeline for successful completion of the project, Cakes must be a minimum of three tiers and incorporate detailed piping and three complex design elements. Sweet table must contain at least three advanced pastry items, and must include at least on chocolate item. Projects will be photographed and evaluated by the customer and course instructor.
